Experiments with Scotch Bonnets


Just a fancy - cooking something with Scotch Bonnets.....

3 deseeded scotch bonnets, minced with coriander, thyme, lime, allspice and spring onion. Soaked into Chicken for an hour then griddled on a smoking hot pan. Very very hot despite careful deseeding. Cooking them on a pan that hot basically created pepper spray in the kitchen.

Things not do do after handling Scotch Bonnets:

  1. Touch your eye
  2. Pee
  3. Pick your nose
  4. That.....

Served with rice with pomegranate seeds, spring onion and coriander.
